Trout Fillets

This trout is so good, just baked simply is all that’s needed. Season the fish both sizes.

Brush a baking dish with olive oil, then add the trout skin side down, sprinkle with some chopped herbs. Cook uncovered for 10 - 12 minutes until opaque and flaky. To serve, top with a squeeze of lemon juice and some capers. Superb!
