Lobster with Thermidor Butter
Our skilled fish mongers cook and dress our lobsters - which makes this recipe even easier to prepare.
Our top tip - make double the quantity of this thermidor butter and freeze half for later - it can be frozen for up to 1 month.

Ingredients
2 Caught & Delivered Lobsters
- 150ml dry white wine
- 1 shallot, finely chopped
- small handful tarragon leaves, chopped
- small handful parsley leaves, chopped
- 1 tsp Dijon mustard
- 1/2 lemon, juiced
- pinch of paprika
- dash of Tabasco sauce
- 5 tbsp parmesan, grated
- 140g butter, softened
Method
STEP 1
To make your butter, put the wine and shallot into a pan, bring to the boil and simmer until nearly dry. Tip into a bowl to cool, then mix in all the other ingredients.
STEP 2
Heat the grill to high. Spread the butter over the lobster so all the meat is covered. Grill for 5-8 min until the butter is bubbling and starting to brown.
TO SERVE
Place the lobsters on plates and pour over any butter from the tray. We like to serve them with new potatoes, asparagus and glass of dry white wine.
