Whole rainbow trout, farmed by our friends at their trout farm in Wiltshire.

Trout is a different eating experience from salmon, but equally as good. Being an oily fish, it’s equally as good for you too!
Here’s a simple way to enjoy whole rainbow trout. Place on a large rectangle of foil, tuck some thinly sliced shallots and herbs into the cavity, gently score the skin, pour over a little white wine, season, and create a parcel. Bake in the oven or on the barbecue. The trout will be flavoursome and moist, and you get a whole one to yourself!
